five potato

Every once in a while, it’s okay to eat fries twice in one day…right?  Especially if one plate is an un-fried home cooked version…  Recipe from In The Kitchen With Rosie by Rosie Daley.

  1. cut five or so potatoes into match sticks 
  2. place in bowl with two egg whites & a tablespoon of Cajun seasonings
  3. spread on cookie sheet that has been coated with vegetable spray
  4. sprinkle a little more seasoning, if desired

One cookie sheet worked, but two cookie sheets would’ve increased crispness.  400 degree oven, 20 minutes, flip (watch out for steam), cook for additional 15-20 minutes

Delish, crispy, spicy coating.   No deep-fried guilt.
